You asked, we listened!
Several clients have commented on how much they enjoyed the cookies we served at our November 2014 client event. We were flattered to hear many thought it was a catered event! It was catered, by the attorneys and staff! Everyone pitched in and made one of their favorite cookie recipes.
Here are some of the cookie recipes from our November 2014 Client Event:
Pudding Cookies
From the Kitchen of Jenna Gimarelli
Makes approx. 18 cookies
1 small box instant pudding
3/4 cup of Bisquick
1/4 cup of vegetable oil
1 egg
Heat oven to 350 degrees. Mix all ingredients together. Roll into 1 inch size ball and place on ungreased cookie sheet. Flatten ball. Bake for 8 minutes.
BISCOTTI COOKIES
From the kitchen of Kimberly N. Thomas
2 cups sugar
1cup butter or margarine
1 bottle anise extract (it fills a 1/4 measuring cup approx. 3/4 of the way full)
3 Tbsp. bourbon
6 eggs
5 1/2 cups all purpose flour
1 Tbsp. baking powder
2 cups chopped almonds, or ground walnuts
Beat the butter with the sugar, add the anise extract, bourbon and eggs and mix well. In a separate bowl, combine the flour with the baking powder. Add the dry ingredients to the butter mixture and mix well. Add the nuts; mix well and refrigerate 3 hours or overnight.
Mixture will be doughy. Remove the bowl and place on floured board. Split the mixture into 3 loaves. Place each loaf on a greased cookie sheet (only one loaf per cookie sheet as it will expand)
Bake at 375 until lightly browned, approximately 20 minutes. Remove the loaf from the oven and cut into slices. Return the slices to the oven and bake approximately .15 minutes until golden brown.
(if you like chocolate biscotti, you can melt bittersweet or milk chocolate chips and spread on the individual slices)
